Preheat your oven to 180C (350F) and line a cookie sheet with baking paper. This recipe makes 12 cookies, so they will all fit on one sheet.
Mix almond meal, peanut butter, maple syrup and vanilla extract to form a dough. If adding choc chips, do that now then mix again to combine everything.
Roll the dough into 12 balls, then flatten out with the back of a fork in a criss cross pattern. If adding salt, you could sprinkle that on now.
Place the filled cookie sheet in the oven and bake for 12 minutes, or until the cookies are golden.
Remove from the oven and either leave to cool on the cookie sheet or move to a cooling rack. Once completely cool dig in!
