Mushroom Salt Recipe

  • Dehydrator (can also be made in the oven)

Ingredients

  • 200 g shiitake mushrooms (4 cups when sliced)
  • 1 cup sea salt

Instructions

  • Thoroughly clean the mushrooms with wet paper towel, gently wiping over the tops and the stems to remove any dirt.
  • Cut the mushrooms into thin slices, approximately ⅛ of an inch or ¼ of a centimetre is perfect.
  • Place the mushroom slices in a single layer on dehydrator mesh sheets being careful not to overcrowd them. Dehydrate on 41ºC (105ºF) for ~4 hours. The mushrooms are ready when they can be snapped in half, which will mean all the water has been removed. If they don’t snap they need to be dried further. Keep testing every 30 minutes.
  • Once dried, remove and add to a small food processor. Pulverise until the mushrooms are completely powdered. This will take a few seconds.
  • Add the powdered mushrooms to a bowl, pour in the salt and mix well to combine. Store in a glass jar in your spice cabinet.

Notes

This recipe makes roughly one cup of mushroom seasoning.
If you don't have a dehydrator, the mushrooms can be dried in the oven - preheat the oven to 170ºF/80ºC. Follow steps one and two above but place the mushrooms on cookie sheets lined with parchment/baking paper instead of dehydrator trays. Again, be careful not to overcrowd them so they dry, not steam. Dehydrate for 3 - 3.5 hours or until the mushrooms snap in half. Continue on with the final steps to grind and combine with salt.
Adjusting the salt - If you'd like the mushroom flavour to be even stronger reduce the salt by ¼ cup. Alternatively, if you'd like it to be a less prominent flavour you can add another ¼ cup of salt.
