Stewed apples with cinnamon + blueberries

A quick and easy treat that warms you from the inside out. Enjoy by itself or as a topping for porridge.

Equipment

Ingredients

  • 1 large red apple
  • ½ cup blueberries
  • ½ cup coconut milk, or your milk of choice
  • ½ tsp cinnamon
  • 1 small knob of ginger, grated
  • A little raw honey to drizzle

Instructions

  • Peel and core the apple then cut it into bite-sized pieces
  • Add the apple to a small saucepan with the blueberries, coconut milk, cinnamon and grated ginger
  • Bring to a rolling simmer (just before a boil) then reduce the heat to low and simmer for 10 - 15 minutes or until the fruit is soft
  • Serve over porridge, granola, or eat as is with a little more warmed coconut milk and a good drizzle of raw honey.
