Easy Greek Leek Pie With Feta

This vegetarian Greek pie combines spirals of golden, flaky filo pastry, creamy feta, a mix of herbs and caramelized leeks. It uses simple, everyday ingredients to create a tasty and nutritious meal.

Ingredients

Prepare the filling

Add one tablespoon of olive oil along with sliced leeks, spring onions, crushed garlic, salt and pepper to a large pan over a medium-high heat.

Soften the leeks

Cook the leek mixture for 10-15 mins or until the leeks are softened and golden. Deglaze the pan with white wine then set aside to cool slightly.

Add cheese and herbs

Add the egg, feta, parsley and dill and toss everything well to combine. The leeks should still be warm so that some of the cheese softens, but not so hot it all melts.

Fill the pastry

Lay a sheet of filo on the bench, brush with olive oil, lay another sheet on top and oil again. Add 3/4 cup of leek mixture - spread along the long edge and roll into a log.

Make spirals

Once the filo log is formed roll it in on itself to form a spiral. Repeat 5 more times and add these to a greased 10" skillet brushing the tops with an egg wash.

Bake and serve

Place the skillet in the oven on 350ºF/180ºC and bake for 40 minutes or until golden brown. Serve with a drizzle of lemon and a green salad.
