This easy tzatziki recipe combines a handful of simple ingredients to create a refreshing sauce or dip. It complements a wide variety of dishes too making a perfect pairing for grilled meats, veg, or sandwiches.
Tzatziki’s star ingredient – Greek yoghurt – contributes both flavour and health benefits. In particular it contains a good amount of protein & probiotic bacteria.
Wash the cucumber, cut off both ends and discard then grate into a bowl. Sprinkle with salt and let sit for 5 – 10 mins so the salt pulls out more moisture.
Tip the grated cucumber into a clean tea towel and squeeze to remove any excess liquid. Then tip the cucumber back into the bowl.
Add the yoghurt, chopped dill, garlic and a pinch of salt to the same bowl then stir until everything is well combined.
Drizzle a small amount of olive oil over the top of the tzatziki then sprinkle with some extra chopped fresh dill.
To serve use as a dip with pita bread or veg or simply add to the table with grilled meats, falafel & veg etc. & use as a sauce.
