Three simple ingredients and little hands on time.
Preheat oven to 90°C / 195°F then peel cloves from one head of garlic. Slice off the bottoms where the root was attached.
Add peeled garlic cloves to a 5-inch pan or ramekin, completely cover with olive oil, then add thyme sprigs on top.
Place the pan or ramekin in the oven and cook for 2 hours. You want the cloves to soften, not fall apart completely.
Spread on toast, add to mashed potatoes, use in salad dressings, or add to soups. Keep in an airtight container in the fridge for 4 days.
