Lamb Pilaf is a hearty and flavoursome dish that's perfect for weeknight dinners or when having guests. It's sure to impress with its fragrant spices and rich, earthy taste.
A Pilaf is rice that is cooked by absorption in stock with spices and it may also include meat and/or vegetables.

Preheat the oven to 200ºC / 400ºF then sauté onions in olive oil over a medium heat until softened.

Add the garlic, lamb, and spices, and cook until the lamb is well browned. Follow with a cup of stock and tsp of salt. Cook for 6-8mins.

Add the rice, apricots, remaining chicken stock, salt and pepper. Stir well, bring to a boil, put the lid on, and cook in the oven for 25mins.

Place walnuts on a lined tray and bake with the pilaf for the final 10 mins. Then whisk together all ingredients for the dressing to combine.

Remove the pilaf from the oven and rest for 10 mins then serve with walnuts plus other toppings of choice and drizzle with the dressing.
