These cheesy polenta chips are a delicious side or snack and will definitely be a crowd pleaser. They can be served as is, covered in grated cheese, or with a perfectly paired dip – like pesto.

Polenta chips are gluten-free and can also be made dairy-free.

Cook polenta

Bring stock and salt to a boil. Pour in the polenta and stir until it thickens (~5mins). Turn heat to low and cook until very thick (~30mins).

Add cheese and butter

Once the polenta is cooked through, quickly stir in the cheese and butter. Ensure it melts and is well combined.

Chill overnight

Pour the cooked polenta into a 20x20cm (8x8 inch) baking dish greased with a little olive oil. Cover and chill in the fridge overnight.

Cut

Next day - cut the polenta into chips, place in a bowl and drizzle with a little olive oil, dried oregano, and salt.

Bake and serve

Put the chips onto a baking tray lined with baking paper. Place in the oven and cook at 200ºC/400ºF for ~30 - 35 mins. Serve!
