Golden-brown Air Fryer Sweet Potato Wedges offer a healthier, tastier twist on a classic. They're easy to make and can be on the table in less than 30 minutes.
Preheat the air fryer on 400ºF/200ºC for 5 minutes while you prep the potatoes.
Peel the sweet potatoes and cut them into evenly sized wedges with a sharp knife (see note 1 below for cutting tips).
Pat the potatoes dry with paper towel to remove any excess moisture.
Place the wedges in a large bowl and toss with olive oil, then add in all the spices, salt and pepper.
Depending on your air fryer model, lay the wedges out in the air fryer basket or on trays in a single layer (see note 2). This ensures plenty of air will flow around them and they will cook evenly.
Air fry for 15-18 minutes, or until golden brown with crispy edges. For even browning on all sides - shake the basket halfway through cooking or flip the wedges if you have trays.
Serve as snack or the perfect side dish with your favorite dipping sauce. Aioli, kimchi mayo, cilantro chimichurri or dairy free pesto are all great pairings.

Note 1: Once the potatoes are peeled, cut them down the centre lengthways, then cut each half in half lengthways, then each of those halves in half. Once that's done, I cut across the middle of each long wedge, so they became two. In total you should have 8 long wedges that you cut through the middle to make 16 shorter wedges. Check the video above for visual guidance if needed.Small, sweet potatoes are the best choice for this recipe, as the wedges can be cut to the perfect thickness easily. I found larger potatoes more difficult to cut and often could not obtain the desired thickness with them.Note 2: Don't overcrowd your air fryer! This will give you very soggy wedges. It may be necessary to cook a second batch if your air fryer is small. The one I use has four shelves, but I only cook two shelves at a time and rotate them halfway through cooking (top shelf swapped with the bottom shelf).
