This delicious fruit paste is sweetened with honey, instead of sugar, and provides the perfect balance of sweetness with a pear-like texture that will liven up any cheese or dessert platter.

This quince paste requires only three ingredients and a little time. It's an easy dish to make and is a great project for cool autumn/fall days.

Peel and chop

Peel, core, and chop quince. Place in a large heavy-based saucepan covered with water and boil for 30 minutes or until soft.

Drain and blend

Drain off the quince, and place in a blender to purée. Measure the volume of purée, then measure out 3/4 of that amount in honey.

Heat and reduce

Place the quince purée, honey, and lemon juice back in the pot and reduce over a low heat for 2-2.5 hours.

Chill for 2 hours

Pour the quince paste into a small dish lined with baking paper. Choose the size based on the thickness you'd like your quince paste to be.

Cut and serve

Remove from the fridge, cut into squares and serve on a cheese board. Store leftovers in an airtight container in the fridge.
